Thai Red Roselle (Hibiscus) produces beautiful pink or yellow flowers in late summer and early fall. Once each flower falls away, allow the calyx (the red "casing" that remains) to grow bigger and harvest to use fresh or dry. You can make an herbal tea with the calyces or find a recipe for Agua de Jamaica, a refreshing iced drink that is popular in Mexico. The leaves of the roselle plant can also be eaten, which is popular among the Karen community of Burma (Myanmar).
